Nestled in the high-altitude volcanic slopes of Boquete, Panama, Finca El Paraiso is a small family-owned farm producing some of the most sought-after specialty coffee in Central America. Run by the third generation of the-maker family, this micro-lot farm is renowned for its meticulous processing methods and commitment to sustainable, shade-grown coffee.
At phat baby cow coffee, we’re thrilled to feature Finca El Paraiso as our latest Featured Roaster, bringing you a cup that’s as complex and refined as the terroir it comes from.

Origin: Boquete, Panama (1,800m elevation)
Varietal: Geisha
Process: Natural (fruit-forward, fermented notes)

This Geisha Natural is a standout example of what Panamanian coffee can achieve. The natural process amplifies the fruitiness, delivering a tea-like body with aromatic florals that hit you immediately on the nose. The first sip opens with jasmine and bergamot, followed by a luscious peach sweetness that lingers into a clean, honeyed finish.

How to Brew It
To honor the delicate florals and fruit notes in this Geisha, we recommend:
V60 Pour-Over (1:16 ratio, 93°C, 3:30 total brew time)
Chemex (for a cleaner, tea-like cup)
Cold Brew (12-hour steep, dilute 1:2 for a fruity, low-acid treat)
Avoid dark roasting or French press—this coffee’s complexity shines brightest when brewed lightly and cleanly.
